As I recall from my dear Grandma – who ran a very large farm courtesy of being widowed three times and having twelve surviving children, you can also:
1. Pluck the chicken’s feathers and fluffy down before skinning, the better to save those feathers for making feather pillows and duvets, and then...
2. Singe the remaining pinfeathers/quills over an open flame, burn ‘em – gas burner or candle will do – to keep the skin on for further baking or broiling. Poultry skin is very rich in fats that add to the cooked bird’s flavor, as well as the fact that – in a natural nutritional environment , without excessive junkfood – fats are highly beneficial as part of a normal diet. The need to skin a critter before cooking might well be more useful with a furry thing....
