Yes, I'm doing it again - but I did find a pretty good site. Hey anybody that has a recipe for Skillet Brownies - gets my vote! :heart

It is a Y2K site - but, the principle is stil the same, right?

I will take alllll the Spam recipes I can find - well, except for Hawaiian spam - uh not so much! DM made this when I was a child. PUKE OH!

Quick Cassoulet :heart
Sally Strackbein

I created this recipe and then had lunch at a fine restaurant a few days later. I ordered cassoulet and discovered that it tasted just like my Spam soup. I made the recipe again with fresh sausage and I liked it better with Spam.

1 T oil
1 can Spam cut into 1/2 inch cubes
1 medium onion chopped
1 can great northern beans
1 can Mexican style chili beans
1 beef bouillon cube
1 can tomato soup
1 can water
1/2 tsp. rosemary
1 tsp. sage
1 tsp. minced garlic

Brown Spam in the oil. When almost brown, add onion. When the onion is golden, add everything else. Be sure to include the liquid in the bean cans. Simmer for about 15 minute and serve.

Serves 4

For reference, the recipe for Puerco Pibil given here is:

5T whole annato seeds 2t whole cumin seeds
1T peppercorns
8 whole allspice seeds
1/2t whole cloves

Grind the above in a spice mill/coffee grinder.

2 habanero chiles, stems and seeds removed, chopped
1/2 cup orange juice
1/2 cup white vinegar
2T salt
8 cloves garlic

Combine the above with the spice mix in a blender, and puree.

Juice of 5 lemons splash tequila 5 pounds pork butt, cut into 2-inch cubes Combine all ingredients in a zip-top bag and mix well. Line a 9x13 pan with banana leaves; add the pork mixture; fold over the leaves to cover, then cover tightly with foil. Bake 4 hours at 325; serve over rice.
