East Texas turned 70 on Wednesday and the whole bunch will be here tomorrow for a big ole blow out. We are having hamburgers and hot dogs and allll the fixin's - for 30 people!!!! :shock: :spit

I've baked a coconut cake, a pineapple upside down cake, and brownies today.

East Texas took me out for a lovely steak dinner tonight. I had a HUGE very berry sangria. YUM!

Come on down, sit a spell, have a cup of coffee and a piece of cake with us tomorrow!

There's plenty - I promise. :crylaugh

Yes, Sky, in the South coconut cake is often referred to as "the Queen of the Sunday table." This is East Texas' favorite cake and I rarely make it, sadly. His mother was the world's champion coconut cake maker and I could not compete with her. The icing is tricky - you have to slowly cook the egg whites and sugar while beating the devil out of it with a mixer.

It turned out really good, though, even if I do say so myself. There is one small slice left. :mrgreen:

I practically had to beat the grandkids off my pineapple upside down cake. Poor ole Grandma only got one piece! :spit
