Yes, Sky, in the South coconut cake is often referred to as "the Queen of the Sunday table." This is East Texas' favorite cake and I rarely make it, sadly. His mother was the world's champion coconut cake maker and I could not compete with her. The icing is tricky - you have to slowly cook the egg whites and sugar while beating the devil out of it with a mixer.
It turned out really good, though, even if I do say so myself. There is one small slice left.
I practically had to beat the grandkids off my pineapple upside down cake. Poor ole Grandma only got one piece!
