smashed taters
I got this off of America's Test Kitchens
take about 20 new red skinned potatoes, wash and place on a baking sheet with 1/2 cup of water, cover the whole pan with aluminum foil and bake for 30 minutes in a 500 degree oven.
Remove and drain any water that may be left, the potatoes should be cooked through.
Using a mallet or a potato masher or the bottom of a jar, apply pressure on each potato, breaking them open and making them about 3/4 inch thick.
Pour about 6 tablespoons of olive oil over all the potatoes, sprinkle with 1 tsp garlic powder , a large pinch of salt and a good grate of pepper, then 2 tsp thyme over the potatos.
place back into the oven for 30 to 45 minutes more, depending on how much crispy you want.* no foil this time The insides are creamy the outsides are crispy its like a fried baked potato. Yummy!
